10-Minute Avocado Toast with Hard-Boiled Eggs and Microgreens

 2 slices of sourdough bread (homemade, if possible—check out our blog for the recipe!)
 1 ripe avocado
 2 2 hard-boiled eggs, sliced
 Micro cilantro (or your favorite microgreens)
 Everything but the Bagel seasoning
  Salt, to taste
 Balsamic vinegar, for drizzling

 Toast the sourdough until golden and crisp.

 In a small bowl, mash the avocado with a pinch of salt. Spread it evenly over the toast.

Slice the hard-boiled eggs and layer them on top of the avocado.

Sprinkle with another pinch of salt, Everything but the Bagel seasoning, and a handful of micro cilantro.

  Drizzle lightly with balsamic vinegar.

Optional: Serve with a side of bacon or sausage for an extra protein boost.
